Lakin Smokery is a small West Country business set up by Adam and Jane Lakin to supply the catering industry with locally produced, quality smoked meats.

Following on from ten years smoking chicken for another smokery, Adam decided it was time to use his experience to establish his own business and develop the skills and expertise he had gained.

We use modern stainless steel kilns, complying with the latest hygiene standards, while still retaining the traditional craft of brining and smoking the products.

Oak chippings used for the smoking are sourced from a local craftsman making oak furniture.

The skill of the smoker is crucial to the texture and flavour of the end product. Following a cold smoke to impart the oak flavour, a period of hot smoking and high temperatures produce an end product that is fully-cooked, moist, delicately flavoured and ready to eat. Every smoking requires individual attention to detail, from temperature to smoke intensity, ensuring a truly hand-crafted result.

Adam and Jane made the decision to specialise in oak smoked chicken believing in the high quality of the product and following on from the enthusiastic response they have received from local restaurants and chefs.
